    以還原胺化法修飾乙型受體素並使用液相層析串聯式質譜儀定量分析

        乙型受體素俗稱瘦肉精,其作用類似於腎上腺素。萊克多巴胺早期被用於治療氣喘,但對人體的毒性太大,在臨床用藥上被淘汰,在1999年,美國FDA核准此類藥物添加在動物飼料中,使動物體內脂肪降解,促進蛋白質生成,而大幅降低飼養成本,增加經濟效益,不過藥物殘留則會造成食安問題。當瘦肉精殘留濃度過高時,可能會引起急性中毒,對於患有心、肝、腎臟慢性病患者而言,食用風險較健康者大。因此,檢測瘦肉精殘留含量是必要且重要的。此篇論文係利用還原胺化法將瘦肉精做化學修飾,並用於檢測方法開發,且檢測儀器為食品安全中最常被使用的分析工具—液相層析串聯式質譜儀,做定性與定量分析。
